WHY THE PRICE IS JUSTIFIED

The price maps to a documented 61 HRC VG10 core and G-10 rather than purely its 67-layer visual treatment. The independent Danish hands-on account reports that it felt good in hand and bit immediately into ripe tomato skin.

MATERIALS

Blade coreVG10 stainless steel, 61 HRC

High hardness supports a fine, long-lived edge for delicate cuts.

Blade cladding66 layers stainless Damascus

Protects the core and supplies a textured appearance; it is not the reason for selection.

HandleG-10 composite

Stable, durable, low-absorption grip material.

IDEAL FOR

  • ·Coring and peeling
  • ·Fine garlic or ginger work
  • ·Buyers wanting hard stainless with a grippy handle

NOT FOR

  • ·Dishwasher use
  • ·Frozen food or bones
  • ·Owners unwilling to protect a 61 HRC edge

DESIGN & ERGONOMICS

The 9 cm blade is compact, while the G-10 handle gives a contemporary, functional counterpoint to the Damascus visual. It is attractive, but the ergonomic evidence is more important than the pattern.

LONGEVITY

VG10 at 61 HRC can retain a fine edge for a long time but is less tolerant of lateral abuse than softer European steel. Hand wash, dry and sharpen on stones; G-10 needs little special care.
