The honest-value sweet spot is roughly $400–$850 for a well-insulated propane/electric oven with a real cordierite floor and usable temperature control. Below that, be skeptical of unverified “950°F in minutes” claims, thin uninsulated shells, tiny/tight mouths, and brands with no replacement-stone/burner path. Gozney
Top Pick30mm cordierite floor and three-layer insulation post the strongest recovery on this list. Twin probes and live temperature readout back up the $2,300 price; 150 lb weight makes it a permanent fixture, not portable.
$800
Gozney
A 20 mm removable stone and dense two-layer insulation pushed lab-measured stone temperature to 871°F. Included thermometer and 14-inch deck close the gap to full-size gas ovens without the bulk.

Ooni
Wood, charcoal or optional gas access a 17-inch floor and 5.7-inch chamber height rare outside masonry ovens. Ooni Connect's probe hub turns solid-fuel cooking from guesswork into measured control.

An L-shaped burner spans a full 16-inch stone, and the low wide mouth makes turning large pies easier than compact rivals. No built-in thermometer, so pair it with an IR gun.

Serious Eats measured over 800°F in 21 minutes and 120-second bakes from an indoor electric unit. A dedicated Boost function targets stone recovery, the usual weak point of countertop ovens.
$500
Gozney
Lab testing recorded a 748°F average stone and 795°F oven temperature from a 19 mm floor and calcium-silicate-backed dome. Rear-mounted flame control remains the one persistent ergonomic flaw.

BUDGETAt $399 it skips electronics for a fully insulated body, lateral burner and removable 12 mm cordierite floor. Independent testing hit over 900°F in about 20 minutes, the strongest budget heat delivery here.
